It’s a great bbq side dish or even a yummy meal on it’s own.. This Italian Pesto Pasta Salad is loaded up with all those Italian flavours, a pesto dressing and boosted gut friendly Made with Kombucha Kalamata Pitted Olives

Quick and easy to make and can be made hours before serving too. We actually prefer to make it hours ahead to let all those flavours infuse!  Thanks to  @_jos_kitchen who shared this delicious pasta salad recipe & photo with us!

Ingredients

100g dried pasta, cook as per instructions
1/2 jar Made With Kombucha Kalamata Pitted Olives
1 Lebanese cucumber, diced
1 punnet cherry tomatoes, halved
1/4 cup toasted pinenuts
1/4 red spanish onion, finely sliced
100g feta, cubed
1/3 cup pesto (homemade or store bought)
1/4 cup Made with Kombucha Whole Egg Mayo (optional if you like a creamier pesto pasta salad)

Method

  1. Cook pasta and drain.
  2. While pasta is hot stir through the pesto. If using mayonnaise combine mayo and pesto together before adding to pasta for a creamy pesto dressing.
  3. In a serving bowl place Kalamata Pitted Olives + Kombucha, cucumber, cherry tomatoes, feta, pinenuts and onion.
  4. Once pasta is cool stir though the fresh ingredients and refrigerate until needed.
